Mhlabia

long recipe behind me, now I’m just in the mood for something easy to make. Mhlabia (muhlabia/mahalabia) is a traditional mid-eastern dessert, a milk base  pudding  flavored with rose or orange blossom water. As for the topping, you might find different kinds of them but my favorite is just the classic pistachios and shredded coconut.  This pudding is  so soft and light, the texture is between jelly and custard, a perfect dessert to serve after a spicy meal 😉 .

Ingredients:

  • 2 1/2 cups milk
  • 2 tbsp corn flour
  • 1/4 cup water
  • 1/4 cup sugar
  • pinch of salt
  • 1 teaspoon rose water/orange blossom water
  • pistachio and shredded coconut for garnish

Directions:

  1. Mix corn flower with water and add to milk which has been brought to a boil.
  2. Stir and cook until thickened and then add sugar.  
  3. Add rose/orange blossom water and salt, boil another few minutes.
  4. Pour into individual serving dishes and chilled for 2-4 hours.
  5. Garnish with pistachios and shredded coconut before serving.

Coconut Pineapple Mousse for Cherri

On the series I tried to feature some of old  blogger friends and new ones,  I consider Cherri from Snippets is a glossy new blogger, she has this great blog full of superb pictures taken by her better half ( I love it when couples collaborate for fun/passionate blogs).

For her, I made sort of  virgin pina colada mousse garnished with mixed dried coconuts and cinnamon powder.

What are your favorite kitchen gadgets?
I actually don’t have very many kitchen gadgets as I have a very small kitchen, but I do have a kitchenaid and I would have to say that, that is definitely my ultimate favorite… it just makes life so much easier.
What are your favorite drinks?
water… I know so boring, but it is so thirst-quenching. 🙂 My favorite drink around the holidays would definitely be eggnog. And, my favorite junk food drink would be pepsi.
What are your favorite desserts?
I love ice cream, especially with nuts, fruits and sauces… go big or go home. 🙂 I also really love any type of mousse and any kind of fruit pie.
What are your favorite  herb/spices?
I have newly discovered using fresh basil in my cooking and I love it! I am also a big fan of mexican food and craved it all through my pregnancy, my favorite mexican spice? Cumin. For baking one of my favorites would have to be cinnamon.
What are your favorite fruits?
Fresh strawberries, apples, and pineapple. Enough said! 🙂

Tropical Punch

Summer time... Summer heat, when I need something  to “cool off”, this is my perfect choice.

I am in a  tropical island, under the coconut trees, on a hammock, beside the sea, drinking this tropical punch..and then… suddenly I wake up!!!…oh no, where am I? In the dessert??? Ah… Thank God I still got the “drink” 😉

Ingredients

  • 400 ml Coconut milk
  • 400 gr Jack fruits
  • 200 gr Lychee
  • 200 gr Fruits cocktail
  • 200 gr Sweet condensed milk
  • 2 tbsp Grenadine syrup
  • 200 ml Sprite
  • Ice cubes

Directions

Mix all the Ingredients together in a big bowl, chill, drink with a couple of ice cubes
